The agave is hand-harvested and the hearts are slowly cooked in clay oven for 2 days. The juice is then extracted and natural fermentation and small batch distillation takes place. The Uno (blanco) tequila is a pure expression of agave with a fleshy, unctuous quality. It is a Blanco in its most natural state. The prefect tequila to sip on its own or used as a base for cocktails. It can even be used in lieu of white rum in a Mojito. Their reposado "Dos" is aged in new American oak for six months giving it a softer edge and wonderful balance.
