Say "Japan" in a beverage context and most will reply "Sake," the traditional rice-based brew that is the classic accompaniment to sushi and sashimi. But in fact wine production in Japan dates from early times (with a two-century hiatus imposed under the Tokugawa shogun ate, which expunged all things Christian and Western). The first commercial winery, west of Tokyo, dates from 1875; today there are 170+ commercial wineries in the country, most of which focus on classic French grape varieties; but there is great enthusiasm for a native variety, Koshu, which has the potential to become Japan's flagship wine.
