Cantina Parusso is a family run and owned estate located between the villages of Castiglione Falletto and Monforte d'Alba, in the hamlet of Bussia. The aim of the Parusso family is to produce great wines prized for their delicacy and elegance, mainly Barolo from single vineyards. Delicate, balanced with crisp acidity and really good tannic structure, the 2000 Parusso Barolo Fiurin is made from 100% Nebbiolo grapes, aged in small oak barrels for a total of 24 months. The nose offers discreet yet refined aromas of mulberry, cherry, wet earth, tobacco, tea leaf, vanilla, and oak. The palate also is discreet, with sharp acidity and a gripping yet integrated tannin structure. After a few minutes in the glass, the wine becomes less shy, exposing elegant cherry, mineral, vanilla, and oak flavors. The lingering finish is earthy, dry and deserves refined earthy, wintry food like game, venison and lamb.
