Founded in 1860 (and currently owned by Bollinger), Ayala is one of the oldest and most respected of the Champagne houses; yet this Champagne house remains quite undiscovered in the US market. Its wines are known for their elegance, delicacy, and balance. A blend of Pinot Noir, Chardonnay, Pinot Meunier, and still red wine;this charming rose has a delicate cherry color with a hint of copper. The palate is dry, elegant, balanced and racy with a fresh yet rich and lengthy finish. Although, refreshing as an aperitif, it is more a food wine, which would be a lovely match for grilled salmon. One of the store favorites amongst the dry rose Champagne that we offer.
