Stefano Accordini considers this red dessert wine one of the best in his portfolio. It is made from the classic varietals used to make Valpolicella (Corvina, Rondinella, and Molinara), but the grapes are dried in the winery loft on trellises and in boxes for four months with a loss of 45% of their original weight. The result is a slightly sweet wine with an aroma of dried fruits and violets and a perfect balance between tannin, sugar, and acidity. Pair it with a wide range of cakes and pastries, especially the Veronese specialty called "Pandoro."
