Former sommelier and restaurateur Hervé Bizeul has found his niche in Roussillon at Domaine du Clos des Fées. Bizeul left the boulevards of Paris for the wild tracts of Roussillon in 1998 to chance the life of vigneron and soon became the talk of the region, with his wines garnering great praises (and sometimes prices). A blend of equal parts of Syrah, Mourvèdre, Grenache noir, Carignan noir. From select plots of old hillside vines on limestone-clay soil. Intensive work in the vineyards: removal of buds and laterals, bunch equalising, leaf-thinning. The harvest is by hand brought in and stored in refrigerated truck. Vinification is done in five hectolitre puncheons, de-vatted when warm, malolactic fermentation and aging in 100% new oak barrels. All operations such as pumping-over, racking and barrel topping are done by hand, without pumps. Aged for 18 months on lees. Unfiltered.
