Located in the village of Fleys, just a couple of miles from the town of Chablis, this winery was founded in 1979 by Paul Nicolle and Josette Laroche, both of whom have a family history of winemaking that goes back to the late 19th Century. The two started with a hair more than two acres of vineyards, which has now grown to some fifty acres of vines; and in 1999 they were joined by son Charly, then just 20 years old and just out of viticulture school. Their planting were entirely in Chardonnay until 2014, when Charly’s wife Lucie Thieblemont bought a few acres of Pinot located on the border with Champagne. Today Charly is in charge of the domaine, though his father is still out in the vineyards almost every day. Charly’s Brut Cremant is a classic blend of Pinot and Chardonnay heavy on the Pinot, full, rich, and mineral-driven, with great depth and a long finish.
