Drouin is a family distillery near Pont l'Évêque in Normandy. Known for producing traditional high-quality Calvados, they have been doing so for three generations. They also own the largest collection of vintage Calvados AOC and Calvados Pays d'Auge AOC in the world. And while the Drouin name for most conjures up images of apples the Drouin orchards are home to pears as well, and the cider Drouin makes from them are definitely not to be overlooked. Made by fermenting the juice from several different pear varieties, with the fermentation process finished in the bottle, the result is fine bubbles that transform this dry, elegant beverage with the essence of pear. Drouin’s “Sour Pear” kicks this up a notch by allowing for a considerably longer fermentation time (and by using pear varieties different from those used for their regular poiré).
