The house motto says it all: "A Passion for the Authentic." It was founded in 1835 by Manuel Gonzalez Angel who, some years later, partnered with his British agent, Robert Blake Byass; the Byass family withdrew from the business in 1998 but the firm is still run by Gonzalez' direct descendants. This Fino is bone dry with a pleasant salinity. It is best served chilled and accompanies seafood tapas particularly well.
