123 Organic Tequila is harvested from the blue agave plant estate-grown near the town of Tequila. The agave is hand-harvested and the hearts are slowly cooked in clay ovens for two days. The juice is then extracted and natural fermentation and small batch distillation takes place. Their reposado "Dos" is aged in new American oak for six months giving it a softer edge and wonderful balance.
