Amoro de Vino is an all-female-owned operation located in the Basque region of northeastern Spain, dedicated to the creation and production of an exceptional line of organic aperitifs. Their Apero Iberico is Spain’s answer to Aperol. Made from 100% pre-phylloxera Viura grapes that are vinified with minimal sulfites, using a process similar to that for making vermouth, the base wine is macerated with several roots, herbs, and botanicals, including gentian root, citrus peels, rhubarb, and notes of saffron. Serve it over ice with a splash of soda and an orange peel.
