The Lemorton family has a long history in the Domfrontais region of Normandy, with Didier Lemorton, now running the enterprise with his wife Martine, representing the sixth generation. Appellation law for the region mandates the use of at least 30% cider from pears; the Lemortons, reflecting the higher percentage of pears trees to apple trees in their orchards, generally up the percentage of prat yo 80%, the result being not only a lighter-colored spirit but one that offers its own very distinct bouquet. Pommeau is the classic aperitif of Normandy, a 2/1 blend of freshly clarified fruit juice and Calvados that has been aged 2-3 years; it is sweet and rich, with pleasant acidity, and with the texture of ripe apple and pear that lingers seductively on the palate.
