Distillery 209 has its roots hack in the late 1800s, when William Scheffler, owner of the winemaking facilities of Edge Hill Estate in Napa Valley, built a distillery on the property, registered it with the Federal Government, and was given the license number of 209. At some point the distillery ceased operations and was converted to a hay barn. Leslie Rudd acquired the property in the late 1900s and decided to restore the distillery but moved operations to Pier 50 on San Francisco Bay. The base of 209 is a four-times-distilled high-proof neutral alcohol made from corn, but this Kosher version is made instead from sugar cane. The botanicals used include juniper berries from Italy, dried lemon peel from Spain, coriander from Romania, and cassia bark from Indonesia. The resulting gin is highly spice-forward with an elegant citrus finish.
