One of the few mezcals that is both organic and biodynamic, the Clásico from Fidencio is made using 100% espadín agave from Santiago Matatlán, Oaxaca. It is fermented using ambient yeast and distilled using an old cognac-style still. This is an entry-level mescal with an earthy nose of wet soil and black pepper; the palate is bright with lime, cinnamon, moderate smoke, and mild tropical fruit notes.
