Penelope Bourbon was created by childhood friends and business partners Michael Paladini and Daniel Polise in 2018, a year after Paladini's daughter, Penelope, was born. Their aim was to produce a lighter, full-flavored straight bourbon whiskey that would find universal acceptance. Their flagship offering is this Four Grain Bourbon, a distinctive blend of three bourbon mash bills combining to the ratio 75% Corn, 15% Wheat, 7% Rye, and 3% Malted Barley. With its perfect balance of rich sweetness and a hint of spice, it works equally well neat, on the rocks, or in a bourbon-based cocktail.
