Kentucky is synonymous with two things: bourbon and horse racing. Fittingly, then, one of the newest players on the bourbon scene is called Pinhook Bourbon, the brainchild of Sean Josephs, proprietor of the late lamented Char #4 here in Brooklyn. For the uninitiated and curious: pinhooking is an old Southern term for the shrewd purchase of very young thoroughbreds. The best pinhookers are brilliant speculators, with powerful gut instincts honed by experience and a deep knowledge of lineage. Intended for everyday drinking, Pinhook’s annual releases of their Straight Bourbon are aged at leas three years. This 2024 “vintage” shows apple, cinnamon and butterscotch on the nose, with a bold palate of raisin, vanilla extract, burnt sugar and toasted hazelnut.
