The Walsh Whiskey Distillery is located in a magnificent 18th century country house in County Carlow, Ireland. Barnard and Rosemary Walsh founded the company, initially as “Hot Irishman Limited,” in 1999 to blend and bottle the perfect Irish coffee recipe. Having moved to County Carlow in 2001, they went on in 2005 to create The Irishman Irish Cream Liqueur and a year later they signed a long-term supply agreement with Irish Distillers for the distilling and laying down of Irish whiskey stock to their specifications. The year 2009 saw the creation of Writers Tears, a unique old Irish pot still whiskey recipe, a vatting of single malt (60%) and single pot still (40%) whiskeys (no grain). Full of honeyed fruity notes, it is wonderfully easy to drink and would be the perfect introduction to Irish whiskey for those unfamiliar with the spirit.
