Following the initial wave of enthusiasm for bittersweet aperitivi fueled by America’s discovery of Campari and Aperol, the domestic market has seen a flood of new entries in the category, both imported and domestic. One of the latest is this Zissou, named reverentially foe the oceanographer Steve Zissou, who drank copious quantities of Campari aboard his research ship in Wes Anderson’s 2004 film, The Life Aquatic with Steve Zissou. This entry is produced by the Wilderness Club, an artisanal craft spirits project in Chicago founded by Soo Choi and Michael McAvena. Clearly intended as a ready alternative to either Campari or Aperol, Zissou features notes of bitter orange, gentian root, and other traditional botanicals and is softer and somewhat less sweet than the originals.
