Tending the vines planted by his grandfather, Claudio Ancarani is now at the helm of this small 25-acre winery. Claudio applies natural vineyard management, promoting biodiversity in his land; he uses no herbicides, only copper and sulfur. He believes in winemaking with minimal intervention and uses indigenous yeast, no new oak, and adds close to zero sulfites. Claudio is proudly championing the rediscovery of the local indigenous grapes, including the Trebbiano from which this pet-nat wine is made. Left on the lees for two months and then refermented naturally in the bottle, the wine has aromas of citrus and baked bread and is fresh and lively on the palate with brisk acidity.
