The Donati estate was started in 1930 and is now run by third-generation Camillo Donati, his wife and their children. They cultivate some 34 acres organically/biodynamically, some owned and some leased, in Emilia-Romagna, about 12 miles from Parma. The vineyards are planted to a mix of Lambrusco, Barbera, Malvasia, Trebbiano, and Sauvignon Blanc. This sparkling wine is made entirely from Malvasia di Candia, which Donati makes in both a dry and a sweet style, this being the dry version. Highly aromatic, this is a rich, full sparkler with a good vein of freshness and a long finish.
