David Trousselle is a small producer in the Hautes Cotes de Beaune, located in a protected valley between St. Aubin and St. Romain. He is already known as a fine and meticulous viticulturist and is currently transitioning his vineyards to organic farming. Although historically this area has been known predominantly for Chardonnay, global warming has meant that Pinot Noir now regularly ripens in this protected valley, as well. These cooler areas in the hills above the better-known villages of the Côte de Beaune are now sought after by wine lovers who prefer the classic lines of traditional Burgundy, meaning higher acid, good mineral cut and a fine graceful texture. Sourced from vineyards in that small valley between St. Aubin and St. Romain, this wine was aged 12-15 months in barrels, only 10-15% of which were new; it is lifted and lacy, with crunchy fruit and at an unbeatable price point.
