Located in Saint-Bris, just a few miles outside the Chablis appellation, Domaine Goisot is today the joint effort of father and son Jean-Hughes Goisot and Guillaume Goisot. Goisot pere was among Burgundy’s earliest practitioners of biodynamic viticulture, and today his son maintains this arduous commitment. Their 80 acres of vineyard, planted to a mix of Chardonnay, Sauvignon Blanc, and Aligote, are all farmed biodynamically, producing wines that have been described as “deep, racy and soil-driven, with as transparent an expression of underlying chalky terroir as any in Chablis proper.” This Aligote, aged on the lees in stainless steel, is a racy, energetic wine with aromas of lemon custard and peppermint.
