Ezequiel Sanchez-Mateos' first career was in banking, but after several years he switched to the world of wine, first creating a comapny called Vivanda & Bibere, showcasing artisanal wine and food products, and then with Reserva y Cata, a chain of wine shops in Madrid, which he now owns. This in tuurn led to a partnership with oenologist Juan Manuel Gonzalvo and the creation of Galgo Wines in 2009, a structure within which the two co-produce wines with small producers all over the Iberian peninsula. For "Once," their producer is Bodega La Tercia, a certified-organic winery with a little more than 60 acres of vines in the heart of La Mancha. The wine is 100% Tempranillo (known locally as Cencibel), bottled unfined and only coarsely filtered; medium-bodied, with ripe cherry and blackberry notes, it is juicy and fun while retaining a structure and sophistication comparable to wines from Rioja.
