After several years working as a winemaker and consultant for large firms in the sparkling wine region of Catalonia, Pere Mata struck out on his own in 2000, with French grower Champagnes as his model. Today he, along with a handful of other cava producers, is at the forefront is at the forefront of a revolution in cava quality similar to what Champagne has experienced over the past twenty years. Mata farms a mere twelve acres or so, all farmed organically since 2007 and currently being certified, and works only with the three traditional grapes of the region, Xarello, Macabeo, and Parellada. This rosado, however, is a 70/30 blend of Garnacha (Grenache) and Parellada that spent more than two years on the lees; bone dry, with great elegance and finesse, it offers just the slightest hint of bright red berry spice.
