Eric Shatt and Deva Maas form the dynamic duo behind Redbyrd Orchard Cider. Eric and Deva, both veterans of the Finger Lakes wineries scene, found their true love in apples and planted their first orchard in the woods behind their house in Trumansburg, on Lake Cayuga, in 2003. Today they grow 60 different varieties, many of them heirloom and many of which are Eric’s own varieties, from budwood gathered from wild trees and grafted and grown out in his nursery. Redbyrd currently produces ten different ciders, both still and effervescent, mostly dry. The Workman Dry is made from a blend of apples from four different categories, heirloom, bittersweet, sharp, and wild; it is fruit-forward, bright and juicy, with aromas of orange peel and tropical fruit.
