Located between the lakes region and the White Mountains of New Hampshire, Sap House Meadery is the project of Ash Fischbein and Matt Trahan, whose intent from the start has been to make mead with a New Hampshire twist, using New Hampshire maple syrup as well as honey and locally grown fruits and vegetables. Ash and Matt like to say that they are always pushing the threshold of where mead can go, and therer can be no better example of that than this Kombucha-style mead. Made by co-fermenting honey and black tea leaves, it is lighter than most meads and somewhat dry, with the perfect balance of tart and sweet.
