The Maison & Domaine of Simonnet-Febvre were founded in 1840 by Jean Febvre, a barrel maker by trade from the town of Montbard. In the early days, the house was especially known for its sparkling Chardonnays from Chablis. Over the years, the Febvres acquired holdings in some of the greatest terroirs in Chablis. In 2003, Simonnet-Febvre was acquired by Maison Louis Latour. Since its purchase, the Latours have completely renovated the winemaking facilities, reworked the vineyards, and hired a talented new winemaker, Jean-Philippe Archambaud. Our wine is not a Chablis, however; rather, it is a Chardonnay from a tiny wine area called Auxois, located halfway between Chablis and Beaune where Latour owns about 18 acres, with plans for substantial growth. The wine is made by Archambaut at the Simonnet-Febvre facilities and offered under that name; powerful and complex, it has aromas of citrus and white flowers with a touch of vanilla on the finish.
