Steve Selin is the creative spirit behind South Hill Cider and Phonograph Cider, both located in New York State apple country, the Finger Lakes. Steve calls himself not just a cidermaker but an apple hunter and an orchardist; he uses a mix of traditional heirloom cider apples and wild apples collected in his neighborhood to craft small-batch ciders that showcase the terroir of the Finger Lakes region. The Rhode Island Greening was the most widely planted apple tree in the northeastern United States in the 1800s. Apples for this cider came from an abandoned orchard last managed in 2005. It has been unsprayed and fallow ever since and is being reclaimed to be a cider orchard. The bracing acidity and luscious nose make it an excellent heirloom for cidermaking.
