Wolffer Estate Vineyard, founded in 1987 on Long Island's south shore, is an American winery in the classic European tradition; the estate comprises 55 acres and practices sustainable agriculture. This is a hard cider with absolutely no residual sugar; it has a sturdy spritz, more than beer but less than a full-throated sparkling wine. Made from a selection of apples grown by the Halseys of White Cap Farm in Bridgehampton, it is turned into a rose by the addition of small amounts of red grape skin extract. The apples are fresh-pressed with no artificial additives, and the resulting cider has great purity and elegance.
