Founded in 1936 by Xavier Bonnot in Saint Lothain in the Jura, this winery is now in the capable hands of fourth-generation winemaker Andre Bonnot, who took over in 2022. Bonnet produces the full range of classic Jura wines, including vin jaune, vin de paille, and the vin de liqueur known as Macvin de Jura. Bonnet’s “Tradition” is a typical Jura white, made from an 80/20 blend of Chardonnay and Savagnin and aged for 24 months with the surface of the wine covered with a thin film of yeast. It has a complex yet elegant aroma of dried fruits and spices and is rich and full-bodied on the palate.
