Founded by Santiago Suarez in Oaxaca in 2012, Casa Amaras is already one of Mexico's largerst producers of artisanal mezcal. Amaras works with 25 Master Distillers (Maestros Mezcaleros) and more than 28 small-scale farmers across 16 Mezcal communities in 13 regions of Mexico. The Mezcal Amaras Espadin comes from 8-year-old agave commercially farmed in the Oaxaca highlands; it shows smoke, citrus and herbs on the nose, and the palate offers the rich and complex flavors of roasted agave, caramel, and cinnamon, followed by a long and satisfying finish with a hint of pepper.
