Del Que Toma el Cardenal was founded in Oaxaca in 2014 by a small group of mescal producers in cooperation with entrepreneurs from the city of Oaxaca de Juarez. The group aced in respose to the increasing industrialization of mescal production, taking as their aim the preservation of the ancestral legacies of their families. All the producers follow a quite rigorous set of rules regarding the cultivation of the agave and the fermentation and distillation processes. This is their tobala, made with 100% tobala (wild Patatorum) and fermented naturally, without any chemical components in an oak wood tub, and roasted in the traditional ground oven lined with hot stones. It features a light lemony aroma with a saline edge and a palate that is reminiscent of gin, with a clean, citrusy profile and bracing peppery finish.
