Federico ‘Fred’ Cremasc (aka Fred Jerbis) is a remarkable young producer of Vermouth, Bitter, Amaro, Gin and Fernet from the town of Polcenigo, in Friuli. He devises his recipes using combinations of botanicals, some foraged wild nearby, some grown by him, some brought in from other areas, then creates his elixirs from these botanicals using varying methods of extraction. For the most part, each botanical is treated individually, to make sure that exactly the right level of extraction is reached. Fred takes enormous care in his work and the result is high-quality spirits with layers of flavor and a sense of place. His Amaro, based on an old recipe from an order of monks, is an infusion of 16 different botanicals in nearly pure alcohol; herbaceous on the nose and palate, it is delicate yet intense, rounded and balanced, finishing with a pleasant bitterness. Classically treated as a digestive, it can also be used to striking effect in many craft cocktails.
