Kentucky is synonymous with two things: bourbon and horse racing. Fittingly, then, one of the newest players on the bourbon scene is called Pinhook Bourbon, the brainchild of Sean Josephs, proprietor of the late lamented Char #4 here in Brooklyn. For the uninitiated and curious: pinhooking is an old Southern term for the shrewd purchase of very young thoroughbreds. The best pinhookers are brilliant speculators, with powerful gut instincts honed by experience and a deep knowledge of lineage. Pinhook created their Collaboration Series as a reflection of their “commitment to exploring the ever growing craft whiskey movement.” In other words, these are not necessarily bourbons. This bottling is #3 in the series, a collaboration between Sean and Jordan Salcito, an internationally renowned sommelier with a storied career in the wine world and at leading restaurants, including Restaurant Daniel, Eleven Madison Park, and Momofuku. It is an Australian whiskey, a blend of four distinct styles of Starwood Australian single malt aged in red wine barrels, that balances fruit, spice, and oak in perfect harmony.
