Sipsmith was founded in Hammersmith, London, in 2009 by partners and friends Sam Galsworthy and Fairfax Hall, joined by master distiller Jared Brown. They effectively kickstarted a craft gin revival, becoming the first copper-pot distillery in London in more than 200 years, making spirits in small, characterful batches using traditional methods. The trio’s success forced a move to larger quarters in 2014. Their VJOP Gin (“Very Junipery Over Proof”) is, not surprisingly, all juniper all the way: with a nose of pine and cedar and a hint of orange zest, this navy-strength gin uses double the amount of juniper berries as their London Dry Gin, and undergoes a three-part juniper-infusion process, including a three day maceration. Quite likely the ginniest gin ever made!
